"Interrupt" doesn't mean "prevent the action from occurring." It just means "resolve the interrupt action before you resolve the action that triggered it."

I think there is actually a sentence in KotS saying that if an immediate interrupt suceeds it does prevent the action it interrupted.

This is only true if it makes the action impossible (such as killing the caster before he gets his spell off, or moving you out of range of the attack that triggered it). Otherwise, no, it occurs first, but does not prevent.

It does annoy me, though I realize that with everything just being powers, spellcasting can no longer be stopped with a well-placed sword. Annoying, I say!

I believe that attacks having a possibility to stop spell casting made a lot of sense, especially with arcane magic. But that would be unbalancing in the new edition.

I'm pretty sure that casting raise dead and scry, to take a couple of example spells, can be stopped with a well-placed sword.

Sure! Just decapitate the target of raise dead, and gouge out the eyes of the scryer. All done. :)
