Lackey and Eddings
The thing about Lackey's books that can be grating is that they're filled with overwrought teen angst. The least angst-filled are the Tarma & Kethry books, and IMO these are not coincidentally the best.
Eddings certainly is formulaic, and you would never catch me calling his work great literature, but there is something about them that makes them as addictive as potato chips for me. Dunno what it is. The characters are nothing more than cardboard cutouts, and he frequently lapses into stereotyping to illustrate the various cultures. But I can't read just one.
