Actually they did show Gambit's name but it was really quick. I believe it was when Mystique was going through Stryker's computers on the list of targeted mutants.

Correct indeed! On Stryker's computer database one of the names shown is Remy LeBeau--none other than everyone's favorite ragin' cajun.

The problem with showing these FX in movies is that each FX costs and they're working on a budget.

I actually believe that less= more as well. The comics were always a bit over the top, catering for a very specific crowd IMO.
