I mean, given Dragons are in the very name, I feel like they should be used rather a lot.
For my own answer to the question: Skeletons. They may not be used 100% of the time, but they're kind of the "default convenient enemy" when there's no other clear option. Hence why they show up so much in computer RPGs.
