My 16th-level paladin has a griffon mount.
Armor:
He's currently running with +1 (boosted to +4 with
Magic Vestment) Full Plate of
Fortification. He also has a +4 shield of
reflecting, and a +2
ring of protection. He depends on the druid for a natural armor bonus from
Barkskin. If he didn't have that available, he'd most definitely also have an
amulet of natural armor.
Weapons:
His mainstay is a +4
holy longsword. In the low- to mid-levels most of our adventures were in dungeons, so there wasn't enough room to summon his mount and engage in charging attacks, so his main weapon needed to be something that could be used mounted and unmounted. A longsword still gets double-damage on a mounted charge if you have Spirited Charge.
His backup weapon is a masterwork lance. I'd always meant to enchant it, but always had other things to pick up, and nowadays it isn't necessary, since he simply casts
Holy Sword on it in the first round (when his mount is gaining altitude for dive attacks).
His ranged weapon is a masterwork composite shortbow, strength adjusted +4. He doesn't use it unless he has to, so it's never been enchanted, but he has it in case he needs it. Always Be Prepared ain't just for Boy Scouts.
