Wouldn't the Pally's Detect Evil work despite the ruse? The demons alignment would still be the same in the disguise....

Only if 1. he didn't use a hide alignment spell or magical item.
Or 2. The paladin didn't use his detect evil. The DM isn't going to assume he's using unless it's stated, "I'm detecting evil".
