Are you sure? I think my interests accumulated around 5PM, which is about the time I set up my bank account, IIRC...

As for daily interests of 5%, like I said on another thread, put 50 gold in there, and let it rot for a year. You'll have a little less than 2 billion (yes, billion) gold.

Is there a cap to Bank Account sizes? If they top out at 10 000 or so, you couldn't have quite so ridiculous a total.
