(Because my group got into a fight with a bunch of them last week, and they are tough foes even at L5.)
The secret city we think of as New Orleans could be their cultural 'capital'.
The Everglades group tames alligators and Poison Toads as pets.

Come to think of it, Grung might be on a low swampy tropical island (almost a coral atoll).

It may be cool if the PC races are around the Caribbean and the mainland contains dinosaurs that attack any settlements that try to form along Florida and Carolinas. The pirate theme works with all the races being able to have some sort of Port Royal to mingle in and major trade routes sailing by going back and forth. Fountain of Life and Lost City of Gold are all good ideas to develop.

Dinosaur riding halflings a'la Eberron.

Colonies can be a bit more developed than IRL.

How close do you stick to history and how normal it is that races intermingle (Not specifically creating half races, but for example a Dwarf living in Spain and things like that)

Depending on that you have to take care that most player races will have a presence in the Caribbean instead of being the ultra rare exception.
The main countries active would be Spain by a huge margin (Humans + Conquered species in America), the British (Elves), French (?) and the Dutch (Dragonborn? or whoever else lives in Germany).

So depending on who you place in France and Halflings being native americans that leaves Dwarves, Tieflings, Half-Orc and Gnomes without much of a presence in your campaign.

Thought about some things more.

Basically not Rome got to the Americas. The colonies are older than IRL and will mostly be city states.

It's pretty much anything goes in terms of placing non humans.

North France might be a major hobgoblin Kings perhaps sunset invasion from the Hobgoblins in the west.

Halflings might be Darksun or Eberron ones and be located in the great plains area.

Gnomes probably artificers somewhere. Maybe on an island. Half Orcs might give them the North France lowlands area.

West Europe probably ex elven empire, some kind of independence war in last 50 years.

Fantasy not Mali might be in Brazil, probably reduce the yuan ti to Maya area.

Silver mines in Peru. No Incas. Not sure who I'll stick there.

Thinking of making 19 elven houses using the guilds from Ravnica.
