Hmmm, I seem to recall this in a published product. I wonder if it was from the Kalamar line?

Dangerous Denizens: the Monsters of Tellene has the Undead Treant and Vampire Cactus, while Garden of the Plantmaster (Rob Kuntz) has the Animated Shrub, Black Jelly Oyster, Black Trumpet, Cinnabar Red Chanterelle, Jelly Tooth, Many-Headed Fungus, Red Creeper, Red Tree Brain, and Vase Thelephore, and a Wood Demon...

but that's the only plant subtype creatures that come to mind.

No, that one's covered. Ravenloft had support from Arthaus, remember, and virtually all of its monsters, including the doppelganger plant, are in Denizens of Darkness and/or Denizens of Dread.
