One thing I do do is track where every skill point came from. Got that habit from the Jamis Buck NPCGen -- it was essential for tweaking the stats.

Personally, I use a modified version of the nifty Creating NPCs method put forth by the Game Mechanics. I find it to be extremely helpful in keeping my own math straight.

Thanks for that link. I'm hoping that it provides me some more ideas when working up my NPCs.
