A lot of the speciality priests have been converted to prestige classes in Dragon magazine articles. There are a few in the new player's guide and the initiate feats kind of turn a cleric into a specialty preist by giving them access to deity specific spells and a special ability related to their deity. It's kind of like a domain specific to one god. The only drawback is that there aren't prestige classes or initiate feats for every major god in the FR pantheon.

A lot of them can gain powers by multiclassing as well. That's what I did with my gnome cleric of Baevern Wildwanderer. I just multiclassed as a rogue. The 2e specialty priest had rogue abilities. And IIRC the specialty priests of Torm were just paladins. There's a new specialty priest of Tyr in the new Players Guide to Faerun.
