Jean Grey's death in the comics was handled quite differently and IMO would have been better if they had stuck closer to the original story. In the movies they used Mastermind (the other wheelchair bound psionic in X2) out of order and in the wrong premise. He was attached to Phoenix in the original comics and we were also introduced to the Hellfire Club. Really, that would have been a much more interesting storyline than the one they gave us with X3. Sebastian Shaw (Strong guy who gets stronger through kinetic absorbtion), Emma Frost (another Psi), Mastermind , a Cyborg, and so much more all (in their alter ego's as villians) stuck on a colonial motif.
It is very hard for a movie studio to stick to the story of something that has grown and developed for 50 years. These characetrs were introduced, developed and changed so many times it is hard for a move studio to try and pack into a 3 hour movie.

The deal is that movie studios, IF they find something potentially lucrative, will sign a 3 year deal. The story that they developed will have to begin, grow and end in a thre epart series. The reason they wind down on the third movie is so that just in case they make something big and cannot renegotiate the contract, and is then stolen by another studio, they dont give away story gold. That's why Fox ended the story line.

Studios know that American have no patience to sit down year after year and watch the same characters grow and change. And ending the series leaves open the chance of spinoffs.

Wolverine can have his own movies as weapon X- introducing Omega Red and everything that was left out from th emovies. Rogue can learn how to fly, and Angel can evolve into Archangel- making way for the introduction of Cable and Apocalypse.

Did she keep her ability to steal the powers of others after that? A friend of mine and I are disagreeing over the point. I thought she got the Ms. Marvel power set and lost her old one...
 

No, she gained the Ms. Marvel powers set but still retained the ability to temporarily steal other powers. I remember during one fight with Nimrod (a Sentinel from the future with an extremely goofy name), she "borrowed" powers from Nightcrawler, Colossus, and Wolverine simultaneously to make it harder for Nimrod to predict her combat strategy.

She definitely kept the draining powers, though she generally tries not to use them much (because doing so is bleeping her up mentally, and on occasion strong personalities have managed to take over).

It seems that the Ultimate-version of Rogue might have lost her draining powers after permadraining Gambit though.
