I understand your thought here.The bolded portion I do not fully agree with. Or, at least, I think that you are using a broader interpretation of "If not otherwise directed, it maintains a constant interval of 5 feet between itself and you." than I am willing to use. IMHO, "If not otherwise directed" refers specifically to the interval that can exist between itself and you. That interval can be anywhere from zero up to your maximum short range (maximum normal movement). I bolded the portion that stands out as relevent to me.
I am not so sure that I agree with the notion that I can direct the floating disk to be "under my butt" while simultaneously directing the disk to be thirty feet from me. IMHO, it needs to be one or the other.
But, as you said, YMMV.
I don't see this as directing it to be simultaneously "under my butt" and "30 feet away". I see the ability to direct it as an absolute motion, rather than a relative one.
That is, I don't direct it to "go 20 feet north of me and three inches east.". I direct it to "go down that trail", and if it happens to take me with it, that's just grand.
As a mode of transport, it's pretty bad. Single moves only, and no movement enhancements apply? It pretty much means that the rest of the party will be waiting for you, all the time.
I mean, why spend a spell slot several times a day when I can spend 75 gp, one time, and have a horse that lasts for days and days, a horse that moves faster, can run, and in a pinch can serve as cover.
Heck, a Mount spell is better transport. Lasts longer too.
But for those odd occasions...
