I run 5E set in Golarion, and goblins are my favorite to portray, and the bulk of my NPC's don't have stats... so I guess Goblin?
I find it more concerning how in 5E a species has rules but virtually no fluff. They've doubled down so hard on "all people are all the same, with no species culture" that species feels to me like a bland mush. One of our younger players was looking at playing a Goliath and reading the 2024 PHB I had no idea how to describe them. "They're people like everyone else, but big" isn't much of a hook. He decided to basically be Korg from Thor Ragnarok.
