From the SRD under types & subtypes:

Undead Type: Undead are once-living creatures animated by spiritual or supernatural forces.
Features: An undead creature has the following features.
...
—No Constitution score.
...
—Not subject to critical hits, nonlethal damage, ability drain, or energy drain. Immune to damage to its physical ability scores (Strength, Dexterity, and Constitution), as well as to fatigue and exhaustion effects.
...
—Uses its Charisma modifier for Concentration checks.
...


If we then go to the introduction of the monsters section of the SRD:

Nonabilities: Some creatures lack certain ability scores. These creatures do not have an ability score of 0—they lack the ability altogether. The modifier for a nonability is +0.

Next question then is: Is there a passage I have missed?

Uh-huh..Thats why I said "I" sub it...Not the rules...

I am from the old school of DMing..In which I make up my own rules like that, based on subjective opinion and common sense.

Heck, way back when, that's all we had, not a SRD to refer to all the time...

I believe that in the actual books there is a reference which says that undead use Cha whenever Con is called for in terms of a particular ability. I can't lay my hands on the books to check it up now, but I'm sure it used to be there even if it isn't in the SRD.
