Rationalizing Savage Species

Here are several possibilities off the top of my head:

He's not necessarily growing. He could be learning how to utilize his abilities. Think of it this way: when I take a rank in a trained only skill, I suddenly get the rank + my ability bonus. All it took was a little training/experience and my latent potential was unlocked to a greater degree than mere training suggests.

Go old school minotaur. It's a curse. He's changing as he kills more monsters because the psychology of letting out his bestial side manifests itself in his physical nature.
It doesn't have to be a curse for this to work.

Going back to the first one, it's especially appropriate if he was a Minotaur raised by humans. He hasn't been taught by his own kind how to utilize his natural abilities.

That doesn't account for size mod though, so that could be a single coincidental factor. Or, what if he was a slave and hadn't received proper nutrition? His growth was stunted, and when he starts adventuring he "gets healthy."

Another in regards to unlocking latent potential/growing more bestial via actions: what if that is just natural to the race or a particular breed? Maybe a Minotaur has to drink from a special pool to get his spider sense, and that the PC hasn't proven himself worthy. Maybe the release of adrenaline in his system sets of a chain reaction of growth hormones in him, so that Minotaurs, until they hit maturity, do age by killing monsters. It would make for an interesting character, as long as he wasn't obnoxiously played, to have someone with the maturity of a 13 year old rapidly aging due to being surrounded by violence.

I say pillage the mountains of nonsensical scifi and fantasy pseudoscience, and that it will allow to make a unique rationalization for every such character that also gives a start to roleplaying the thing.
