I agree on all points. In fact, so does the SRD.

I just like to stick with the path of the least resistance. Adding the ability to reattach limbs/bones to the Fast Healing ability has fewer negative implications than making an undead not immune to subdual damage. :)

Well, if it's only subdual damage "inflicted" from being converted from regular damage I don't really see the problem. It would still be clear - for my homebrew skeleton - that this is a special case and attempting to sap a skeleton would be ineffective. :)
 

Yes, that's understandable. For a "formal" writeup, however, it is usually better to bend the rules as little as possible, IMHO. I don't see it as nit-picking, but as retaining consistency.

Sometimes the rules have to be bent a little to create the creature you want. That is not a bad thing. I just believe in consistency. :)
