I think I've figured out a nice little trick. I looked at the risk/return per unit, and it looks to me that fighting the dragon is the best bet for me. Sure, I can defeat the death knight easily enough, but the dragon is more valuable, relatively speaking.
Consider: Each time you attack, you get 1 to 5% of experience. Doesn't matter if you're fighting the fluffy bunny or the balrog. That means each attack gets you an average of 3% of experience.
I can defeat the dragon, most times, in one strike. That's 500gp per attack.
With the death knight, it's generally three attacks, for a reward of 700gp (233gp per attack).
If I want to make sure I'm properly equipped by the time I get to 70th level (I'm almost 50th), I'm going to have to maximize my risk/return per unit.
