Your spell slots are like a pile of batteries (or, if you prefer, capacitors) labelled 1, 2, 3, etc. A size 1 capacitor always has the same amount of energy in it, doesn't matter where it came from. For this reason, you add together your levels in full spellcasting classes (like cleric and sorcerer) to determine your total spell slots.

As a result, when you burn spells to make SP, you aren't burning "Sorcerer" slots and "Cleric" slots. You're just burning slots. Because there are no "Sorcerer" or "Cleric" slots. There are just spell slots.* Likewise, if you consume SP to make a new spell slot, it's just a spell slot, it doesn't have a class it must be used for.

*There is one exception here: Warlocks use a different spell mechanic, Pact Magic, as opposed to Spellcasting. A Pact Magic slot is in fact different from a non-Pact Magic slot. But it's explicitly been confirmed that multiclass Sorcerer/Warlocks can burn Warlock slots for SP, so I presume it should go in the other direction as well.
