Shapechange -- suggestions?

So I've recently gotten my grubby wizardly hands on the Shapechange spell, and put it into by spellbook. But with all the options of monsters, considering practically every book has a few, plus 5 MMs, and all the changes to the polymorph spell the SRD says it works similar to, I'm kind of in the dark for good canidates.

Thoughts so far:

Beholder (since all the powers are Su, as I recall, plus antimagic cone)
Dragons, various (elemental immunities, keen senses, and fastest flyers if manuverability isn't a priority)
Bigger demons/devils/angels (DR, SR, immunites, some regen, some have true seeing, possibly spell-like abilities -- unclear on that one)
Elementals (decent speed for water and air, DR, elemental immunities)
Golems (magic immunities, construct traits)
Incorporeal undead (undead immunities, incorporeal is very handy even out of combat)

Other than these general thoughts, any suggestions for this (potentially most powerful) 9th level spell?

Guardinals are nice for lay on hands to heal. You can just switch out of the form when you're done. Leonal's also have a rather nice roar ability.

In Frostburn, there's some wierd Valhalla-like dwarf race that gets tons of magical crafting feats as bonus feats. For item making during downtime. :)

But yeah, choker really can't be beat, unless there's other creatures with extra standard actions.

Oh, if your DM allows the serpent Kingdoms book (I think it's that one), you could possibly make pun-pun. If you like your campaign and want to keep playing it; if you value having a good relationship with your DM and players; do not do this.
