I would go for one save in that particular situation, because I think that's far more realistic in a situation where you meet many creatures that are almost EXACTLY equal. However, I would increase the DC of the save because the despair "aura" or whatever would be stronger when there are many creatures contributing to its efficiency.

What about 2 identicaly designed twin elven NPC Wizards hurling fireballs? Better yet, what about one elven NPC wizard, and his clone, hurling fireballs at you?

EDIT: Crap. Can't type.

I think I would only make them save once, if only to save the group from total party wipeout. I'd do the same against, say, 10 troglodytes or ghasts, with their stench effects.

I've always wondered if 10 troglodytes really smells 10 times worse than one troglodyte. I mean, realistically, once you are vomiting from the stench, how much worse can it really get?

At least (as with the mummies), the effects overlap rather than stack. I guess that with 10 mummies, you can just be pretty certain that everyone is going to be paralyzed.

Total Party Whipeout? Let see 10 mummies is a EL 10. If 4 10th level PC's can't take a beating from 10 cr3 Mummies for the 2-3 rounds they will be parlalized there's something wrong.

The mummies would be able to coup de grace the players who are standing paralyzed (this assumes the mummies can reach the players with their move of 20 before the duration runs out, admittedly not a sure thing.)

For fireballs? One save if they hit exactly at the same time, though the damage would then be doubled (or added to the other fireball if they have different damage). THis adds to the randomness of the game, statistically.
For Hold Person, I would rule two saves. The same for rays. Mainly because that makes more sense from a physical point of view.

For me, if a gathering of mummys approach, it makes more sense to use only one save, but increasing the DC. However, the disease saves should be rolled individually.
