I would have liked a 3.5 retool of the Epic Level Handbook with some serious rule overhauls and a rewrite of Union to be more. . . I dunno. . . epic.

Expedition to Sarlonna - a complete campaign set in Riedra

Dunno about the Prestige Class Compendium - it'd have to be about a thousand pages long, and I don't trust them to correct all the crappy design mistakes they made originally (or at least what I think are mistakes - for example a prestige class which requires BAB +7 to qualify for but only has 3/4 progression when you get into it).
 

Expedition to the Temple of Elemental Evil

...yes, I know we got 3.0 RttToEE, but a hardcover revamp of the original for 3.5, ala the other "Expedition to" series, would have been freakin' awesome.

ToEE remains to this day my favorite "mega module" of ANY edition. Maybe it was just the awesome DM we had at the time...
