Something regarding polymorph any object

If someone was to cast polymorph any object to a human to turn him into an orc, would the subject be acting like an orc as well, like the baleful ploymorph spell? If not, what spell do I need to perform this operation? An epic spell would do as well. The said person is a human fighter that put on a helm of opposite alignment.
