How do you guys keep up with spell components for players? It seems like a pain to keep up with most of them. Do you just make players buy the components for upper level spells?

For stoneskin... and stuff of that level of expense, yes. For the rest, no.

For any spell component what cost is any gp (stoneskin resurrection...) yes
for others spell components not

PHB, Equipment Chapter:

Spell Component Pouch:... A spellcaster with a spell component pouch is assumed to have all the material components and focuses she needs except those that have a listed cost, divine focuses, or focuses that wouldn't fit in a pouch...

Yup, don't know too many folk who play with keeping track of all spell components. Though I have played in a game like this in the past, Eschew Materials became a very popular feat after a while, along with non-arcane caster classes heh.
