I'm looking for anywhere that has a good Prc for a Barbarian/Cleric of Odin... There's nothing I know of in WotC products that fits, but I think there might be a Prc of that type in some book with Norse(-inspired) material.

I haven't seen anything for the Norse. 'Slaine' may have something, but I believe that's more Celt/Irish mythos.
There is nothing like that in the Slaine book which is out of print anyway. You should better go and create your own class. By the way, there is a Druid Avenger variant in Unearthed Arcana 3e, that proposes a druid with the rage ability of barbarians.

There's always the Sohei from OA. Mix of a paladin and a barbarian. The picture isn't half bad either. ;)

Your a lawful guardian who can ki frezy x/day. Not a full caster (highest level spell is 4th) but it Is a full 20 level class. Might give you the jump you need...

Indeed. I had forgotten that class! Actually I find it somewhat weaker than most classes (it has a priest bab), however it is easy to modify slightly: for a barbarian-cleric give it access to all cleric spells and no alignment restriction; for a barabrian-sorcerer give it access to the wizard spell list, but give them the weapons and armors of barbarians.

Actually I like this concept and will see if I can turn it into a C&C class.
