Because it's just that - an example. A PC could spellstitch his undead minions. It also clearly states that undead spellcasters can spellstitch themselves. In short, nothing in the template's description specifically prohibits PCs from getting it (assuming they're undead). Of course, if you chose not to allow it in your games, that's your right. I personally see no problem with it. The benefits it provides can easily be outdone by magic items (which would probably cost alot less exp).

Spellstitching is a process that was originally meant for either DMs or PCs to put on undead, not themselves, but it can be. Personally, if I was DMing a campaign in which a PC decides to spellstitch himself, I wouldn't add a Level Adjustment. My reasoning is that he is "creating" the stitching just as a wizard/cleric with craft wondrous item creates magic items; I don't slap on a LA +1 to a character for creating/wearing a cloak of charisma, so why should I for spellstitching? In all honesty, they are already paying a large amount of XP to apply "spellstitched" to their character, so why would I add on a Level Adjustment?
 

Speaking as a DM that allows Spellstitching at LA 0, it is a tremendous use of resources. Liches in particular should be wary, as it forces them to invest in keeping their body alive (which is contrary to typical lich MO, for some players) or lose their investment.
