No love for Redd Foxx? (RIP) He was great, very dirty, but great and many others mentioned here owe a debt to him.
I enjoy Carlin, his books often leave me laughing out loud, but I can understand how he would turn some people off.
I haven't seen anyone mention Sinbad, so I'll add him as well.

I can't believe I've gotten through 53 posts and nobody's mentioned Patton friggin' Oswalt? If you are a gamer, you are required by law to love Patton Oswalt. I know he's more well known for that King of Queens show, but his stand-up is awesome. He makes tons of comic book, SF, horror and RPG references in his act.

The only other guy to really get me going is (was ) Bill Hicks. He's my prophet.
