I've actually been clocking my NPC creation times. I've got it down to under a half hour for a 20th level character, which isn't bad at all after just a week of having the book. Core-only D&D would be fourty-five minutes to an hour, and Core-only d20 Modern would be at least a half hour. Adding supplements could easily take D&D into the two-hour range, especially for a caster.
Starting with 20th level characters was almost certainly a bad idea. I learned to stat Saga characters by starting them at 1st level and advancing them, only building them from scratch at 20th once I had a grasp of how they grew.
I'd also say those three builds probably didn't need every drop of multiclassing they had, by any means. I'd say the standard builds will be one base class and one PrC, or one base class and two PrCs for force users (Sith Apprentice and Sith Lord, Jedi Knight and Jedi Master, or Force Adept and Force Disciple, depending on tradition).
