And I have to admit it's an element I really don't care for, to put it mildly.

To play devil's advocate a bit, that's just as much fulfillment of a fantasy as exploring old Sith ruins is. For anyone who DOESN'T successfully plan out every bit of their life, they like to be able to imagine that they can; who wants to stomp on their fun? :D

I think the new system has not fully resolved the tension between organic character growth and anxiety about hosing your character by making irrevocable choies.

Maybe. I think that's the kind of thing best left up to the GM. If a player came to me and said, "Jay, dude, I made a serious mistake with Baba O'Rylee," I'd probably reply, "Well, let's see what we can do to fix it!"

That's why we play these games with pencils. :)

I think that tension is a feature of the game.
 

For what it is worth, there is a third way to gain training in a new skill, besides spending a class feat on skill training or spending a general feat on it. Every 4 levels you can raise your Int. Thus at 4th or 8th level, you could get training in a class skill. If you have previously multiclassed (or use the 4th/8th level to multiclass) into a class with it as a class skill, you are golden.
