In the Flesh to Stone description it says that only creatures made of flesh are affected. It's pretty clear this excludes elementals, oozes, plants, and almost all constructs. It seems this should include (monstrous) humanoids, giants, fey, animals and magical beasts. But what about outsiders, undeads and vermins?
