Demogorgon or Orcus?

Orcus strikes me as having more ambition than Demogorgon, and is easier to use in a game IMO. If I were to run an "Against the Demons" campaign, by late epic tier Orcus would usurp Demogorgon's "title" as Prince of Demons through some nefarious Machiavellian scheme.

Lacking that, Orcus is a semi-undead balor with the skull of a dead god as a weapon and a ghoul with a cloak of mouths as his closest ally. Orcus wins. Demogorgon is a close second, though.

If given the chance Ari, what level/role would you make him?

Probably 34th level, since that's as high as you can go without stepping on the toes of the gods. But I might even go as high as 35th, making him on-par with the lowest gods in terms of power, but lacking the deity-specific abilities.

As far as role? I'd definitely focus his powers on disease effects (including necrotic and/or poison) damage, plus charming effects from his staff. So my first instinct is to say controller, but I think an argument could be made for making him a soldier, if one toned up the disease-based damage and toned down the disease-based conditions. In either case, I'd create a brand new, high-level disease to go with him.

This is, of course, all off the top of my head. If I actually sat down to stat it all out, something else might strike me as the better way to go.

Yeah, sounds awesome; makes me wish even more that Wizards would somehow find a place for him in the current cosmology.

I almost put Juiblex (or Yeenoghu) as the alternate choice but figured Graz'zt had a better chance of competing.

When you put it that way, Orcus sounds pretty cool. But I think I was imprinted with the 1st edition Monster Manual and the Demogorgon picture is muuuch cooler. Graz'zt really should be a devil, imo.
