How did Freedom of Movement make the fight go easily? Am I missing something?
With FoM, they can't be grappled, thus they can't be swallowed. It doesn't allow them to overcome the DR 15/epic or the regen 40 per round, however, so I'm still curious how they dealt over 1000hp in 5 rounds.

A fight that last 5 rounds is a long fight for our group :)

Well, one of the fighter used Karmic Strike & Combat Reflexes to basically double his attacks.

When you consider all the bonuses (Haste, Inspire Courage +7, Recitation, GMW, high Str bonus.....) and the fact that the fighter/occult slayer crit on a 15+* and with all the PA going on, they were able to do a lot of damage.

My character was utterly useless in that fight.

*One HR used in Trainz game made it easier: if you confrim a crit with a crit, you keep rolling until it's not a crit. So you start at 2X and if you confirm with another crit that confirm you do 3X and if that one confirm with a crit you fo 4X.... Hope I explained that correctly.

But if you kept a troll chained up in the pantry, you could cut a nice fresh steak off him (mmm...flank steak) and grill that up every meal of the day...maybe with fava beans.
Trolls are type Giant, and so still need to eat. Regeneration doesn't restore HP lost to Hunger, thirst, or suffocation. You will still have to feed the troll, and I think this could be trivially adjucated to a losing proposition.

You + You = You. Barring magic (and Regeneration is Ex, for trolls, at least) something that requires sustenance can't get sustenence from itself. Granted, that isn't listed in the RAW, but then, neither is eating trolls.

Another option would be to rule that troll flesh is poisonous.

Don't dismiss me! Thank you very much.

Did I mention that this troll also functions as a toilet?

Oh, so you are going to get the troll all nice and diseased while you eat his flesh? What a wonderful idea.

If you are going to be keeping the troll chained up, and eating him, get him a ring of Sustenence or something, then put locked gauntlets on both his hands while he is helpless, then chain him out spread-eagle with masterwork adamantium so he can't move at all (and such that he can't take 20 to break/escape from those bonds). The ring sustains him, he sustains you.

Of course, such torture is evil, so you'd better not have a paladin around...

People don't normally make troll characters (in my experience, anyway), but I've thought about having a troll PC, just to cut back on food for the party. That's the thing that no one has considered yet...that the troll could voluntarily lose a limb for food. I'd say the troll probably requires external nourishment though.
