I think going at least 7 levels here for the 4 spells, Evasion and Stillness of Mind. 10th level Purity of Body and possibly 14th level Diamond Soul are all great IMO.
Aard - Fist of Unbroken Air + Stunning Strike (if required)
Igni - Sweeping Cinder Strike, Fangs of the Fire Snake, Hatchling’s Flame, Red Dragon’s Claws all possible.
Quen - Deflect Missiles+Impenetrable Iron Tortoise Shell, Become the Teapot

Continuing to level 11 opens up other possibilities.
As a monk you can wield staff, call it whatever, like a Witcher Blade, and do 1d8 finesse while still attacking with your Martial Arts as a bonus action.
