Another useful tool is to keep a sheet of random things the PCs might encounter. Just any random ideas that might pop into your head when you're thinking about other things. It could that they find a singing rock or meet a troll philosopher. Doesn't need to be more than a sentence or two. Then, when you're not sure what to do next during a session, just scan down the list and drop one of these encounters in. They're often entertaining, can sometimes lead the campaign in surprising directions, and most importantly buy you a little time to brainstorm what to do next.
