I especially like using Dragons that are polymorphed into human form and just when the pc's think they are winning the battle, he runs to a clearing and polymorphes into dragon form.... ohhhh it is soooooo awesome to hear the holy
s come from them..... i have only did this once..... but in my current game i am planning on doing it with a hobgoblin... yes, a hobgoblin.... the cheif of a tribe is a young red dragon.... ha ha ha ha!

Hags, definitely hags. I love using covens of Hags to terrorize the countryside only to be defeated by roving bands of heroes.
In fact, lately I have been actively forcing myself to find other monsters to use in place of my 'old standby'.
Slowly but surely, Slaadi and Barghests are climbing up on my "favorites and most often used" list.

well, IMC, all creatures with an intelligence score over 3 are allowed to choose their own alignment, so nothing has the "always" alignment. Also, any creature with an intelligence score over 3 can take a class (those that usually use HD to advance simply have monster as their favorite class). Using this less than nice combination, I've found that I'm rather fond of LE ghouls with levels in monk...
In my current campaign, I'm highlighting yuan-ti and evil outsiders (demons and devils, primarily the latter). Yuan-ti are great for subversive intrigue with a sinister feel. Evil outsiders, done right, provide powerful motivation in the players to pursue and destroy them. The reaction my players had to seeing the effects of a devil's corruption of innocence was truly shocking and inspiring.
Of course, I always like to throw in some mindless muscle, and magical beasts fill that role well. I'm really looking forward to the encounter with the Huge, advanced Chimera
