Torturing my brain with a homebrew: help needed, new questions!

In lieu of Christ, you may consider the Redeemer (as a friend of mine uses) or the Anointed. Both are used to describe Jesus but used less often in the vernacular. It might help gain a little more separation for you and your players.

As for naming the religion's founder Christ, Redeemer, or Anointed, I will think more about it before deciding what to do.
 

As for the magic, maybe the new WotC book, Magic of Incarnum, poses a solution to your search? Don't know that much about it, but from the description, just changing the 'spirit' stuff to them being demons may do the trick. We'll have to wait and see.

Other things to look at are the Wokan and Elementalists from Blackmoor, the Witch class from Arcana Evolved or the Mchawi wizard from Nyambe. Just a little bit different. As long as these beings are all NPC's anyhoo, the exact mechanics and involvement of demonology does not even need to be resolved.

Another way is to split up spells in 'domains' related to different (types of?) demons. You need to get a feat for summoning / binding a specific (type of) demon to gain access to a new domain.
