Trade/Craft/Profession skills...detailed enough?

They just released a 3.5 version of that book. I haven't had a chance to really read it yet, but it looks good

ST Cooley revamped the crafting rules in The Enchirdion of Treasures and Objects D'Art (which can be found on rpgnow). It takes a bit more math than the standard rules, but at least more expensive stuff takes longer (unlike the core rules).
