So I could make a +1 Flamming, FLamming, Flamming longsword that does 1d8 +1+3d6 fire on every hit.
Sure, why not? For nearly all purposes it'd be equivalent to a +1 flaming thundering shock longsword.

Creatures that are immune to critical hits still take the burst damage. A critical hit confirmation is required for the burst effect but it's still an effect like Flaming that does damage regardless of creatures ability to be "crited".

ABout noting the Bold text.

-----
Flaming Burst
Upon command a flaming burst weapon deals +1d6 points of bonus fire damage on a successful hit. In addition it also explodes with flame upon striking a successful critical hit. The fire does not harm the hands that hold the weapon. Flaming burst weapons deal +1d10 points of bonus fire damage on a successful critical hit. If the weapon’s critical multiplier is x3, add +2d10 points of bonus fire damage instead, and if the multiplier is x4, add +3d10 points of bonus fire damage. Bows, crossbows, and slings so enchanted bestow the fire energy upon their ammunition.
Caster Level: 12th; Prerequisites: Craft Magic Arms and Armor and flame blade, flame strike, or fireball; Market Price: +2 bonus.

And yes, the bonus damage stacks as it is not one of the bnous types (luck, moral, insight etc).

Of course, if it doesn't you can be an evil bastard DM who gives overpriced uneffective weapons to his PCs, so that they can't upgrade them as easily. Whatever floats you boat.

There's a Frost Giant outside who'd like to see you, sir...
That's why I said "nearly all." ;)
For every frost monster who'd take sick damage from the triple-flaming weapon, there's a fire monster against whom it would be a simple +1 longsword. IMO the multiple-flaming sword would actually be less desirable than one with several different energy types, because it's less likely to find the weak spot in a creature's immunities.

And there are quite a few of those fire resistant or immune monsters around... just too much for an evil Dm...
