D&D 3E/3.5 Using D&D 3.5 rules only, how would you simulate a Jedi?

I would think you'd start out a couple levels in Soulknife, then pick up a few levels in Psychic Warrior. Any other suggestions? Class/Level suggestions? Feats/Spells/Powers suggestions?

A bit of Monk would be good - I don't recall seeing many jedi use armor, but they had a knack for not being where the bullets were. Possibly a few levels of Swashbuckler and Duelist.
 

Pretty much straight Psychic Warrior, I'd say. Have the lightsaber be just a piece of gear - probably a bastard sword in form and function, just with a different appearance. Simulate some of the other jedi-ness with feats.

If you wanted to diversify some, Psychic Warrior, a few (like.. one, maybe) levels in Monk mostly for the wis to ac thing, and possibly with the more force oriented folks persuing levels in Psion rather than PsiWar. Telepaths or Kineticists mostly.
 

I'd probably mix 2-3 Monk levels, and then mixing Soulknife/Psion (Kineticist or Telepath, plus the Expanded Knowledge feat) levels to taste. There might be a better class than Psion for this in the Complete Psionic, but someone's borrowed my book...
 

Import the SWd20 Jedi over to D&D? :p

Barring that, Gestalt Battledancer (Cha to AC) / Soulknife | Wilder (with Hidden Talent at 1st, and alot of Expanded Knowledges)

Or perhaps write up a dozen or so new Soulmelds (Jedi Mindtrick, TK, Force Grip, one for the Lightsaber as a melee-touch attack, etc, etc) and make him/her/it as a Law-Incarnate.

Make it an extendable blade of force (no, not The Force) that ignores all hardness and DR, and gives +4 to Sunder attempts. Can be destroyed by disintegrate, but is restorable as a standard action unless the hilt is destroyed. That's probably a +4 or +5 equivalent weapon ability.
