Quite true - but its the overall total that's likely to spread more. If you're rolling six dice in total, than the overall bell curve - and the chance of an extreme distribution - is much flatter than if you're rolling a total of twenty-four dice.
As for heading towards semi-standard arrays with only a few points difference in the totals, you'll find that the results are almost the same as a high-level point buy anyway - although a few playes may wind up with higher scores in attributes which aren't important to their characters - and if that was what they were naturally good at, why didn't they take advantage of it in their training?
