The game likely has placeholder sound and music (from OoT) for now...

Yes, it is all gameplay and/or scenes rendered by the gameplay engine. The only thing altered was the camera angles, according to Miyamoto. There was also an additional 2 and a half minutes of footage that was only seen by the press.

Nostalgia for what? At best it harkens back to OoT and MM, and they aren't that old.

This style really doesn't suit the feel of the Zelda series the way the one for WW does.
