I tend to run them in typical Norse/Tolkien style, but a bit more stoic than I've seen in other campaigns. They generally get along with humans who behave themselves, but look down on them as ignorant, with the short lifespans and all. One feature my dwarves have is the belief that Moradin created all gold, and dwarves of old foolishly lost or traded most of it away. All religious dwarves feel it is their responsibility to recover as much gold as they can.
As for elves, I run the much more fey than most folks. While individual elves can often integrate into human society, people are afraid of elves in general. Elves from outside human society are extremely aloof, not wanting to form any attachments to someone of a race that will die so soon.
