Personally, this is what I'd like to see, added to what Humans already have (Bonus Feat, Bonus Skill Points, and Favored Class: Any):
1) At a MINIMUM, give Humans the ability to take 1 Non-Restricted Skill as a Class Skill.
2) I'd like Humans to have the ability to stick a +2 bonus in a stat of choice, and take a -2 penalty in a stat of choice. And if they want unmodified stats, they can stick both on the same stat so they negate each other (Might want to force a Human to take either a -2 penalty to two stats or -4 penalty to one stat, if the +2 bonus goes to Strength, though I don't think it'd be unbalancing to not have a -4 penalty to counteract that +2 to Str. Just my opinion, of course).
3) I'd like to see Humans have the ability to be come not just as Medium creatures, but as Small and Large creatures, as well. Either through a choice at character creation, or more likely, through taking one of 2 Human-Only Feats which can only be taken at 1st level (This is likely the better choice). I.E. The "Small Human Feat", which makes you a Human who's Small-size, or the "Large Human Feat", which makes you a Human who's Large-size.
This'll help to illustrate just how different humans can be, size-wise. I want a Feat that makes a Human Small (Like Mini-Me) and gives him all the bonuses and penalties for being Small. I'd also like a Feat that made a human Large (Like your average NBA player), and gave him all the bonuses and penalties for being Large (Though it'd be best if Large were defined as 7 ft or taller, not 8 ft).
Had that idea for the size thing after watching a Bruce Lee movie and seeing the way a tall black guy fought against an average sized guy (Or at least average sized for a chinese man, but still Medium for the purposes of D&D. Can't remember the name of the movie. Anyone know what I'm talking about?). The guy demonstrated the advantages of being a big tall guy in the 2 fights they showed him in (Which, according to D&D rules, would be the 10 ft. Reach. He sure as hell demonstrated the advantages of having a longer reach than his enemies).
But anyway, I'd like for D&D rules to be able to cover the extremes of human physical forms. From the shortest of midgets to the tallest of NBA stars and guys like Andre the Giant.
So those're my thoughts. How about you?
