What do undead do when they're not killing adventurers?

Good answers already given... just adding some rambles that came to mind when reading the question

* mindlessly wander the perimeter "on guard"
* sort through rubble/debris (if it's a fallen city, perhaps the person that raised them gave them a comand to clean up or search for "something" of imprtance in th ruined city)
* make giant sand blocks to create a pyramid (again, a command given by their raiser..)

As a more serious reply:

Mindless undead have well... no minds. They don't do anything, but what is told to them, they are controlled or commanded to do something, otherwise they just stand around doing nothing.

In your case, these are obviously uncontrolled undead. I'd suppose, that they are just inactive, dormant so to say, until something wakes them up (i.e. an intruding life force).

Another option is to have them do, what they did before, when they were still alive. They don't know why, they just do it. As an example, let's assume they were in a mine, they will hack stones from the wall (not necessarily containing anything useful, just random stones), put them into buckets or lorries (hope that's the right word? ;)) and transport them to an area where they throw them on a pile. Stuff like that. Pointless, mindless, but resembling what they did before.

Play bingo. You don't have to be intelligent to play bingo, so even zombies can do it.

Wander around aimlessly? Find something living to torture for being alive when the zombie is not? Braaaaiiiiins?
