What happened to the 1 monster/page layout of 3.5 MM?

It was never planne to do that. It WAS planned to minimize the necessary "page-flipping" when using monsters, such as in the case of demons and devils.

And I'm quite glad about the angels. ;)

1 page per monster has never, ever, ever been a good idea in the first place. It's typically a massive waste of space, and thus a waste of my money as a consumer.

Weird. I thought I heard many people on this board before decanting the goodness of the 1ppm layout in old editions (1e?).

I love the 1-page per monster type of layout. A big shame that they changed the MM from that. :(

Also, thumbs-down on the name change to "angels" from "celestials". No biggie, though. It falls into "A" now, I guess, which fits with what I've always been calling them: aasimon. ;)

hmm... (Opens old D&D books...)

OD&D Monsters and Treasure: Nope. Most monsters got a paragraph, not much else.

D&D Basic Set: Hmmm... Nope. Small Paragaphs and stat blocks.

AD&D Monsters Manual: Still multiple monsters per page, but now with B&W Art!

AD&D Monster Manual 2 and Fiend Folio: Ditto.

D&D Rules Cyclopedia. Looks just like the Basic Set, but art intermixed thoughout it.

AD&D Monsters Comphendium (Folder Edition): A-HA! One Monster Per Page so as to allow monsters to be added and removed fromt the binder!

AD&D Monsters Comphendium (Bound Book): Just carried over the format from the Folder, but book-bound it and colorized the art.

AD&D Monster Comphendium Annuals/Campaign Settings: Same format as others (originally Preformatted sheets for the binder, later soft-bound books).

Hmm... Seems like D&D history sides with the multiple monsters per page method over the one monster a page method.

If the 3.5 MM was one-per-page, they'd either need to cut short the number of monsters dramatically, or massively up the page count and price. Having a layout to keep statblocks on the same page is the best compromise, methinks...
