Other. I prefer to advance my monsters by Hit Dice or templates to create my bosses. I use the class levels on the fodder. ;)
 


What about an intelligent unholy weapon that buffs its user? That way, evil minions can pick it up mid-combat when the current owner dies, but the weapon is a tad bit uncomfortable for good aligned PCs to wield.

I had a BBEG like this once. The guy holding the sword was a nobody who inherited the sword from it's previous owner. The sword itself was the true villain of that portion of the campaign.

To answer the question above, I vary it quite a bit just to keep the PCs on their toes and to try out different tricks.
 

I like sorcerers because they're easy to customize and "theme", but in play they're easy to run.

I haven't use warlocks yet, but I suppose they'd be even better on both counts.
 

Whenever my players encounter a cute little halfling woman, they get nervous. The more innocent she seems, the more they fear her. If she's all rosy-cheeked, smiling and friendly, they'll soon be convinced she's just about to slaughter them! :p

Class-wise, I like bosses (big or mini) with lots of skill points, so I often use either rogues or wizards (or even arcane tricksters).
 


My bosses are often large monsters, as is the nature of my setting. I think I use Clerics + all the undead they can control as a mini-boss more than other classes.
 

Fihgters, usually humanoid and then monkeyed for a single combat trick. Trip, sunder, AC, whatever, but on terrain that gives them the advantage. Bull rusher on narrow ledges was my favorite. If I'm feeling really sadistic I send in two of them at once.
