I draw everything on my big Chessex flipmat. I only use the 1" square side though, not the hex side ever so far except for testing erasability of markers. I also use the poster maps with modules that have the 1" square grid on them already.
 



I did hexes for a while, in order to avoid the 1-2-1-2 counting of third edition, but it was a pain to draw corridors and walls. . .

I tried this also, but went back to 1" squares. For diagonals and other non-straight movements, our group uses 6" long pieces of ribbon or string. Just lay it out along the path the character is moving, then place the figure in the last square the ribbon or string touches (inside the lines). I think this is basically how wargamers do it on gridless terrain dioramas.
