what to change for new campaign?

I was wanting to run a campaign set in a norse setting. I would have the players have direct dealings in mythic sagas without really realizing it. I want to have lots of ROLE-playing as well as great fights, captivating traps and puzzles, and unique magic.

What should I change as far as races, monsters, classes, and magic? Are there any maps I could use? Should I let players play characters from other cultures (the questing English Knight, The chinese monk, etc.?) What are rogues like in Norse Myths? (well besides loki...)

Make sure to focus a lot on the weather. It is very important to such a campaign and the cultures within.
