I'd say Grendel's immune to damage from normal weapons, so a DR/hand-to-hand might be appropriate (Although it would add a new category)

Harder. Better. Faster. Stronger. More grapple-themed. Probably with rake. I also recommend giving her DR based on some material - Beowulf couldn't kill her without using a "giant-forged sword". In my Dragon article, I made it adamantine.
