I like DC guidelines, a comprehensive condition summary, and comprehensive combat modifier charts.

A "grappling flowchart" would be nice, too.

I would love a place that I could put additional notes not covered on the screen. No screen can have everything, thus i'd like a post it area on it where i can put stuff related to the campaign im playing.

What tables do I want? If size doesn't matter....
A BUFFET table and possibly a wet bar.

Seriously though, the basic in game disputables are the best.
Turning is a must and a section on skills would be on my priority list.
